Pumpkin Cheesecake to Go

Here's a little treat I made for my fist period snack a couple days this week.
I layered pumpkin spice Alouette Cheese, pumpkin, pumpkin butter, and vanilla bean cheesecake Alouette Cheese on graham crackers--tastes just like a cheesecake, but healthy, too!
If you leave the "sandwich" in the fridge or give it time to sit, the graham crackers will soften, making it much easier to eat compared to if they were still crunchy!

Did you also catch part of my customizable coffee cup decoration for Thanksgiving in the background?

Powerful Pumpkin Pancakes

I found this stuff at Bed, Bath & Beyond on Saturday, and had to get some.  It's packed with nutrients that I need and has a fantastic flavor.

Here is a spoonful of it.  I got the flax, sunflower, pumpkin, and sesame seeds, and goji berries blend.

I love to make pumpkin pancakes, but by adding this to the batter, I stepped it up a notch!  It made the flavor even better and gave them a great boost for post-workout recovery!
These pancakes have whole wheat mix, oatmeal, Linwood's ground superfood, pumpkin, pie spice, ginger, cinnamon, and nutmeg.  On top I spread pumpkin, pumpkin butter, cinnamon, honey, and a little sugar free syrup.

Tada!  Double stack!

and of course, nothing goes better with pancakes than some coffee.  Especially coffee with seasonal flavored creamer.

Caramel Pumpkin Pie Protein Shake

Friday mornings are my smoothie and popcorn in first block days, so this time I decided to take a different path with my smoothie.

I love pumpkin if you didn't know already, so I made one just like a pie, but healthier!

This shake has:
pumpkin (of course)
pumpkin butter
vanilla yogurt
cinnamon, nutmeg, ginger, and pumpkin pie spice
Yoplait Greek Honey Caramel Frozen Yogurt
Honey Maid low fat honey graham crackers
cheesecake flavor pudding
vanilla protein powder
vanilla
This shake is great for you all who are craving all the indulgences of the fall seasons!  You can have the sweet stuff and still feel good about it, too!  This is a yummy choice for those hard workers who need an extra boost, since it has a little healthy fat from the Yoplait, carbs from the pumpkin, yogurt, and whole grain in the graham crackers, dairy from the yogurts and pudding, and antioxidants from the spices.

Almost Pumpkin Cheesecake

I made up this recipe as a snack that I could take to school. I love pumpkin and cheesecake, and this season has gotten me all excited for the sweets. As a runner, however, I try to make the sweets healthy too. So here I used Honey Maid Whole Grain Honey graham crackers for the bottom. I mixed whipped cream cheese, pumpkin, pumpkin butter, and cinnamon and spices together to spread on top. Delicious!
